  • 3 cups cooked jasmine rice (preferably day-old)
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 large eggs
  • 3 tablespoons low-sodium soy sauce
  • 4 green onions (chopped)
  • 1 teaspoon sesame oil

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. While it's heating, chop your vegetables and green onions.
  3. In a bowl, whisk the eggs with a pinch of salt. Lightly spray the air fryer basket with nonstick spray, pour in the eggs, and cook for about 3 minutes until scrambled. Remove and set aside.
  4. Add cooked jasmine rice, mixed vegetables, soy sauce, and sesame oil to the air fryer basket. Toss well to combine.
  5. Gently fold in the scrambled eggs and chopped green onions.
  6. Air fry at 375°F (190°C) for approximately 8 minutes, shaking halfway through for even cooking.
