- 3 cloves fresh garlic, minced
- 1 tbsp fresh ginger, grated
- ¼ cup low-sodium soy sauce
- 2 tbsp honey
- 1–2 tbsp Sriracha sauce (adjust for spice level)
- 1 tbsp vegetable oil
- ½ cup mayo
- 1 tbsp lime juice
Instructions
- Cut chicken breasts into bite-sized pieces.
- In a mixing bowl, combine soy sauce, honey, garlic, ginger, and Sriracha. Add chicken and marinate for at least 30 minutes.
- Thread marinated chicken onto skewers (soak wooden skewers in water for 20 minutes beforehand).
- Preheat grill to medium-high heat (400°F/200°C). Grill skewers for 10-12 minutes until internal temperature reaches 165°F (75°C), turning occasionally.
- While grilling, mix mayo and lime juice in a small bowl for dipping.
- Serve skewers hot with dipping sauce drizzled on top.
