- 1 cup cucumber, sliced (about 150g)
- 100g feta cheese, crumbled
- 2 tbsp fresh dill, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 45-60 minutes until fork-tender.
- Allow the beets to cool slightly before peeling off the skins; chop into bite-sized cubes.
- In a large bowl, combine chopped beets and cucumber slices. Crumble feta cheese over the top.
- In a separate bowl, whisk together olive oil and balsamic vinegar; drizzle over the salad mixture and toss gently.
- Finish by adding chopped dill on top and serve.
