  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen black cherries, pitted and chopped

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fluffy. Add eggs one at a time, mixing well after each addition; stir in vanilla extract.
  4. Gently fold in black cherries into the cream cheese mixture.
  5. Pour the filling over the crust and bake for 30-35 minutes or until set but slightly jiggly in the center.
