  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz flat rice noodles
  • 4 cloves fresh garlic, minced
  • 4 green onions, sliced thinly
  • ¼ cup low-sodium soy sauce
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • Nonstick cooking spray
  • Crushed peanuts and lime wedges for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper; place in the prepared dish.
  3. In a bowl, whisk together soy sauce, tamarind paste, brown sugar, minced garlic, and a splash of water.
  4. Bake chicken for about 20 minutes until golden brown.
  5. Cook rice noodles according to package instructions until al dente; drain.
