  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 1 cup burrata cheese
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Pound chicken breasts between plastic wrap to about half an inch thick.
  2. Season both sides of the chicken with salt and pepper. Set up three shallow bowls: one with flour, one with beaten eggs mixed with garlic, and one with panko.
  3. Dredge each chicken breast in flour, dip into the egg mixture, and coat in panko breadcrumbs.
  4. Heat olive oil in a skillet over medium heat. Cook each breaded chicken cutlet for about 4-5 minutes on each side until golden brown.
  5. Transfer cooked cutlets to a baking sheet lined with parchment paper and bake for 10-12 minutes until cooked through.
  6. Top each cutlet with burrata cheese just before serving. Drizzle with lemon juice and enjoy!
