- 1 lb sirloin or ribeye steak
- 1 cup long-grain white rice
- 4 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup diced bell peppers
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups low-sodium beef broth
- Salt and pepper to taste
Instructions
- Sear the steak in a skillet over medium-high heat for about 4 minutes per side until browned. Remove from heat and let rest.
- In a pot, bring beef broth to a boil; add rice, cover, and simmer on low for about 20 minutes until fluffy.
- In another skillet, sauté onions and bell peppers in oil over medium heat until tender (about 5 minutes).
- Mix cream cheese into sautéed veggies with minced garlic; stir until smooth. Add shredded cheeses and mix until gooey.
- Slice rested steak into bite-sized pieces; combine with cheesy veggie mixture and cooked rice.
