  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh romaine lettuce, chopped
  • ½ cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • 4 large flour tortillas (10-inch)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Grill or sear for 6-7 minutes per side until the internal temperature reaches 165°F (75°C). Let rest before slicing.
  2. While the chicken rests, wash and chop romaine lettuce into bite-sized pieces and place in a mixing bowl.
  3. In a separate bowl, mix Caesar dressing with lemon juice. Pour over romaine and toss to coat.
  4. Slice rested chicken into thin strips.
  5. Lay out tortillas and layer with dressed lettuce, sliced chicken, and sprinkle with Parmesan cheese.
  6. Fold in sides of each tortilla and roll tightly. Slice in half diagonally if desired.
