- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter, softened
- 1/4 cup fresh parsley, finely chopped
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- Salt and pepper to taste
- 2 tablespoons low-sodium soy sauce (for drizzling)
Instructions
- 1. Preheat oven to 400°F (200°C). Place chicken breasts between plastic wrap and pound to about 1/2 inch thickness.
- 2. In a bowl, mix softened butter with minced garlic and parsley until combined.
- 3. Place a scoop of the herb butter mixture in the center of each chicken breast. Fold sides over and roll tightly; secure with toothpicks.
- 4. Set up a breading station: season flour with salt and pepper, dip chicken in flour, then egg wash, and finally coat with panko.
- 5. Place breaded chicken on a greased baking sheet and bake for 25–30 minutes or until golden brown and internal temperature reaches at least 165°F (74°C).
- 6. Let rest for a few minutes before serving. Optionally drizzle with soy sauce before enjoying.
