  • 1 lb ground beef (80/20)
  • 4 cups green cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1/2 cup green onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • Salt and pepper to taste

Instructions

  1. Prepare your vegetables: slice the cabbage, julienne the carrots, and chop the green onions. Mince the garlic and grate the ginger.
  2. Heat a large skillet or wok over medium-high heat. Add ground beef and cook until browned; drain excess fat.
  3. Stir in minced garlic and grated ginger; sauté for one minute until fragrant.
  4. Add cabbage, carrots, and white parts of green onions; toss to combine with beef.
  5. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, salt, and pepper. Pour over the stir-fry.
  6. Cook for an additional two minutes until cabbage slightly wilts but remains crunchy. Serve hot.
