  • 1.5 lbs small Yukon Gold potatoes
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. Preheat your oven to 425°F (220°C).
  3. On a parchment-lined baking sheet, gently smash each potato to about half an inch thick using a potato masher or glass bottom.
  4. Drizzle olive oil over the smashed potatoes and season with salt and pepper.
  5. Bake for 25-30 minutes until golden brown and crispy around the edges.
  6. While baking, mix parsley, chives, lemon juice, salt, and pepper in a bowl to create the dressing. Toss baked potatoes with this dressing before serving warm or at room temperature.
