- 2 lbs chuck roast
- 4 guajillo chiles (dried)
- 1 large onion (sliced)
- 4 garlic cloves (minced)
- 2 cups low-sodium beef broth
- Juice of 2 limes
- Corn tortillas (for serving)
- Fresh cilantro (for garnish)
- Diced onions (for garnish)
Instructions
- Remove stems and seeds from guajillo chiles. Soak in hot water for 15 minutes until softened.
- Blend soaked chiles with garlic, onion, lime juice, and beef broth until smooth.
- Sear the chuck roast on all sides in a skillet over medium-high heat for about 3-4 minutes per side.
- Place the seared meat in the crock pot and pour the blended sauce over it. Cook on low for 8 hours or high for 4 hours until fork-tender.
- Shred the meat using two forks and reserve some broth.
- Warm corn tortillas and fill them with shredded meat. Top with diced onions, cilantro, and a drizzle of reserved broth.
