Description

Crock Pot Birria Tacos are a deliciously comforting dish that combines tender, slow-cooked meat with rich spices, all wrapped in warm tortillas. Each bite bursts with flavor, making these tacos perfect for any gathering or cozy family dinner.

Ingredients

Scale
  • 2 lbs chuck roast
  • 4 guajillo chiles (dried)
  • 1 large onion (sliced)
  • 4 garlic cloves (minced)
  • 2 cups low-sodium beef broth
  • Juice of 2 limes
  • Corn tortillas (for serving)
  • Fresh cilantro (for garnish)
  • Diced onions (for garnish)

Instructions

  1. Remove stems and seeds from guajillo chiles. Soak in hot water for 15 minutes until softened.
  2. Blend soaked chiles with garlic, onion, lime juice, and beef broth until smooth.
  3. Sear the chuck roast on all sides in a skillet over medium-high heat for about 3-4 minutes per side.
  4. Place the seared meat in the crock pot and pour the blended sauce over it. Cook on low for 8 hours or high for 4 hours until fork-tender.
  5. Shred the meat using two forks and reserve some broth.
  6. Warm corn tortillas and fill them with shredded meat. Top with diced onions, cilantro, and a drizzle of reserved broth.
