- 2 cups elbow macaroni
- 1 lb lean ground beef
- 1 can (15 oz) chili beans, drained
- 1 can (14.5 oz) diced tomatoes with chilies
- 2 cups shredded sharp cheddar cheese
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
Instructions
- Brown the ground beef in a skillet over medium heat; drain excess fat.
- Sauté the onions and garlic in the same skillet until softened.
- In a crock pot, combine cooked macaroni, browned beef, sautéed onions and garlic, chili beans, diced tomatoes (with juices), chili powder, and half of the cheddar cheese.
- Cook on low for 4 hours or high for 2 hours. Stir occasionally.
- About 10 minutes before serving, add remaining cheddar cheese on top and cover until melted.
