Ingredients

  • 2 cups elbow macaroni
  • 1 lb lean ground beef
  • 1 can (15 oz) chili beans, drained
  • 1 can (14.5 oz) diced tomatoes with chilies
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder

Instructions

  1. Brown the ground beef in a skillet over medium heat; drain excess fat.
  2. Sauté the onions and garlic in the same skillet until softened.
  3. In a crock pot, combine cooked macaroni, browned beef, sautéed onions and garlic, chili beans, diced tomatoes (with juices), chili powder, and half of the cheddar cheese.
  4. Cook on low for 4 hours or high for 2 hours. Stir occasionally.
  5. About 10 minutes before serving, add remaining cheddar cheese on top and cover until melted.
  6. Serve hot and enjoy!
