  • 3 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice (about 1 lime)
  • 1 cup long-grain white or brown rice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp olive oil

Instructions

  1. 1. Marinate the chicken: In a bowl, mix soy sauce, lime juice, minced garlic, and honey. Add chicken and marinate for at least 30 minutes.
  2. 2. Cook rice: Prepare rice according to package instructions and set aside.
  3. 3. Sauté chicken: Heat olive oil in a skillet over medium-high heat. Add marinated chicken and cook for about 6 minutes per side until golden brown and cooked through.
