  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fresh lime juice
  • 2 teaspoons sesame oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a bowl, mix soy sauce, pineapple juice, brown sugar, garlic, ginger, lime juice, and sesame oil until the sugar dissolves.
  2. Place chicken in a resealable bag or dish; pour marinade over it. Seal and refrigerate for at least 1 hour (or overnight for better flavor).
  3. Preheat grill to medium-high heat (about 400°F).
  4. Remove chicken from marinade (discard marinade) and grill for about 6-7 minutes per side until internal temperature reaches 165°F.
  5. During the last minute of grilling, add pineapple slices to the grill until charred.
  6. Let chicken rest for 5 minutes before serving with garnished green onions and grilled pineapple.
