- 4 medium bell peppers (red, green, or yellow)
- 1 lb lean ground beef
- 1 medium onion, diced
- 1 cup green bell pepper, diced
- 1 cup sliced mushrooms
- 4 oz provolone cheese (sliced)
- 2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Slice the tops off the bell peppers and remove seeds. Set aside.
- In a skillet over medium heat, brown the ground beef until fully cooked. Add diced onions and mushrooms; sauté until soft. Season with garlic powder, salt, and pepper.
- Fill each bell pepper with the beef mixture and top with provolone cheese.
- Place stuffed peppers in the baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake an additional 5 minutes until cheese is bubbly.
- Allow to cool slightly before serving.
