  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Chop chicken into bite-sized pieces.
  2. In a bowl, whisk together soy sauce, honey or maple syrup, cornstarch mixture, garlic, and ginger; set aside.
  3. Heat oil in a large skillet over medium-high heat. Sauté chicken for about 5-7 minutes until golden brown.
  4. Add bell peppers to the skillet; stir-fry for another 3-4 minutes until tender but still crisp.
  5. Gently fold in diced mango and sauce mixture; cook for an additional 2-3 minutes until heated through.
  6. Serve hot over steamed rice or noodles.
