- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tbsp fresh ginger, grated
- 4 garlic cloves, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- 2 tbsp vegetable oil (for cooking)
Instructions

- Gently fold in diced mango and sauce mixture; cook for an additional 2-3 minutes until heated through.
- Serve hot over steamed rice or noodles.
