- 1 cup sweetened coconut flakes
- 1 cup chopped toasted pecans
- 1 cup brown sugar
- 1/2 cup heavy cream
- 3 egg yolks
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two round cake pans.
- In a bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
- In another bowl, mix buttermilk, eggs, melted butter, and vanilla until smooth. Combine with dry ingredients and mix until just blended.
- Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- For frosting: Combine coconut flakes, pecans, brown sugar, heavy cream, and egg yolks in a saucepan over medium heat. Stir continuously for about ten minutes until thickened.
- Once cooled, stack cake layers with frosting in between and on top.
