  • ¾ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1 can (14 oz) sweetened condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and sugar.
  3. In another bowl, mix eggs, buttermilk, vegetable oil, and vanilla until smooth. Combine with dry ingredients until just mixed.
  4. Pour batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. For the frosting, heat coconut flakes, pecans, and condensed milk in a saucepan over medium heat until bubbly. Cool before spreading on cooled cakes.
  6. Assemble by layering the cakes with frosting in between and on top.
