  • 1 cup sharp cheddar cheese, shredded

  • 1 cup low-sodium canned tomato sauce

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, sauté diced onions until translucent (about 5 minutes). Add ground beef and cook until browned.
  3. Stir in sliced zucchini, garlic powder, and Italian seasoning; cook for another 5 minutes.
  4. Mix in the canned tomato sauce and let simmer for an additional 5 minutes.
  5. Layer half of the beef-zucchini mixture in the baking dish, followed by half of the cheddar cheese. Repeat the layers.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil for the last 10 minutes to brown the cheese.
