- Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a large skillet over medium heat, sauté diced onions until translucent (about 5 minutes). Add ground beef and cook until browned.
- Stir in sliced zucchini, garlic powder, and Italian seasoning; cook for another 5 minutes.
- Mix in the canned tomato sauce and let simmer for an additional 5 minutes.
- Layer half of the beef-zucchini mixture in the baking dish, followed by half of the cheddar cheese. Repeat the layers.
- Cover with aluminum foil and bake for 25 minutes. Remove foil for the last 10 minutes to brown the cheese.
