Ingredients

Scale
  • 2 large russet potatoes
  • 8 oz sirloin or ribeye steak
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crispy bacon bits
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp chopped chives or green onions

Instructions

  1. Preheat oven to 425°F (220°C). Wash and prick the potatoes with a fork.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  3. In a skillet over medium-high heat, season the steak with salt and pepper. Sear for 4-5 minutes per side until cooked to your preference. Let rest before slicing.
  4. Once baked, slice the potatoes open and fluff the insides with a fork. Top with cheese, bacon, sliced steak, and sour cream.
  5. Garnish with chives or green onions. Add more cheese if desired and return to the oven for a few minutes until melted.
