- 1 tsp dried rosemary
- 2 tbsp olive oil

- In a large Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side).
- Remove the roast and sauté chopped onions and minced garlic in the same pot until fragrant (about 2 minutes).

- Pour in beef broth and red wine, scraping up any browned bits from the bottom of the pot.
- Season with thyme and rosemary. Cover and transfer to the oven.
