- 1 cup green or brown lentils
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 small red onion, diced
- 1/2 cup crumbled feta cheese
- 1/2 cup extra virgin olive oil
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water; boil in 3 cups of water for 20-25 minutes until tender. Drain and let cool.
- While lentils cook, chop cucumber, cherry tomatoes, and red onion.
- In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- In a large bowl, combine lentils and chopped veggies. Pour the dressing over and toss gently.
- Fold in crumbled feta last for presentation. Chill for at least 30 minutes before serving.
