Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, diced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water; boil in 3 cups of water for 20-25 minutes until tender. Drain and let cool.
  2. While lentils cook, chop cucumber, cherry tomatoes, and red onion.
  3. In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. In a large bowl, combine lentils and chopped veggies. Pour the dressing over and toss gently.
  5. Fold in crumbled feta last for presentation. Chill for at least 30 minutes before serving.
