Ingredients

Scale
  • 1 lb Brussels sprouts, halved
  • 1 cup fresh corn kernels (about 1 ear of corn)
  • 3 tbsp mayonnaise
  • 1 tsp chili powder
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup cotija cheese, crumbled (plus more for topping)
  • 2 tbsp fresh cilantro, chopped (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Wash and trim the Brussels sprouts, cutting them in half.
  2. 2. Toss the halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until golden brown and crispy.
  3. 3. While roasting, grill or boil the fresh corn until charred or tender (about 10 minutes). Once cool, cut the kernels off the cob.
  4. 4. In a bowl, mix mayonnaise, chili powder, lime juice, salt, and half of the cotija cheese until well combined.
  5. 5. Combine the roasted Brussels sprouts with corn and sauce in a large bowl until evenly coated.
  6. 6. Serve on a platter or individual plates topped with remaining cotija cheese and cilantro.
