- 1 lb Brussels sprouts, halved
- 1 cup fresh corn kernels (about 1 ear of corn)
- 3 tbsp mayonnaise
- 1 tsp chili powder
- 2 tbsp lime juice (freshly squeezed)
- ¼ cup cotija cheese, crumbled (plus more for topping)
- 2 tbsp fresh cilantro, chopped (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Preheat your oven to 400°F (200°C). Wash and trim the Brussels sprouts, cutting them in half.
- 2. Toss the halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes until golden brown and crispy.
- 3. While roasting, grill or boil the fresh corn until charred or tender (about 10 minutes). Once cool, cut the kernels off the cob.
- 4. In a bowl, mix mayonnaise, chili powder, lime juice, salt, and half of the cotija cheese until well combined.
- 5. Combine the roasted Brussels sprouts with corn and sauce in a large bowl until evenly coated.
- 6. Serve on a platter or individual plates topped with remaining cotija cheese and cilantro.
