  • 2 large eggs (room temperature)
  • 2 cups powdered sugar
  • 1 tsp cherry extract
  • 3 tbsp heavy cream

Instructions

  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat softened butter and pineapple juice until creamy. Add eggs one at a time until fully incorporated.
  4. Gradually fold the dry mixture into the wet mixture, then gently stir in the pineapple chunks.
  5. Fill each cupcake liner two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, whip together powdered sugar, cherry extract, and heavy cream until fluffy for the frosting.
