Ingredients

  • 1 cup quinoa (uncooked)
  • 1 cup shelled edamame (fresh or frozen)
  • 1 cup cherry tomatoes (halved)
  • ½ cucumber (diced)
  • ½ red onion (finely chopped)
  • 3 tablespoons lemon juice
  • 4 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine with 2 cups of water in a saucepan. Bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  2. If using frozen edamame, boil in salted water for about 5 minutes until tender. Drain and set aside.
  3. While quinoa cooks, chop cherry tomatoes, cucumber, and red onion.
  4. In a bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. In a large bowl, combine cooked quinoa, edamame, chopped veggies, and dressing. Mix gently until everything is coated.
  6. Serve immediately or chill for an hour before serving.
