Ingredients

  • 1 cup quinoa
  • 1 cup frozen edamame
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions (usually about 2 cups of water for every cup of quinoa). Bring to a boil, then simmer until fluffy.
  2. In boiling water, cook frozen edamame for about 5 minutes until tender. Drain and set aside.
  3. Chop cherry tomatoes, cucumber, and red onion. Combine all veggies in a large bowl with cooked quinoa and edamame.
  4. Whisk olive oil, lemon juice, and honey in a small bowl. Pour dressing over salad ingredients and toss gently to combine.
  5. Garnish with chopped parsley before serving.
