  • 2 medium eggplants, sliced thin
  • 3 medium potatoes, peeled and sliced thin
  • 1 lb ground beef or lentils, cooked
  • 1 cup creamy peanut butter
  • 1 cup tomato sauce
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Salt the sliced eggplants and potatoes, letting them sit to draw out moisture.
  3. In a skillet, sauté onions and garlic until fragrant. Add ground beef or lentils and cook until browned. Mix in tomato sauce, peanut butter, cinnamon, nutmeg, salt, and pepper; simmer until thickened.
  4. Layer half the potatoes in the baking dish, followed by half the eggplants and half of the meat mixture. Repeat layers finishing with eggplant on top.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  6. Allow to cool for 10 minutes before serving.
