- Toss the sweet potato cubes with olive oil, salt, and pepper; spread on the baking sheet in an even layer.
- Roast for 25-30 minutes until golden brown and tender, flipping halfway through.
- In a bowl, whisk together orange juice, balsamic vinegar, honey, Dijon mustard, salt, and pepper until combined.
- In a large bowl, combine roasted sweet potatoes, spinach or kale, and red onion. Drizzle with vinaigrette and toss gently to coat.
