  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh spinach or kale
  • 1/2 red onion, thinly sliced
  • Juice and segments of 2 fresh oranges
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato cubes with olive oil, salt, and pepper; spread on the baking sheet in an even layer.
  3. Roast for 25-30 minutes until golden brown and tender, flipping halfway through.
  4. In a bowl, whisk together orange juice, balsamic vinegar, honey, Dijon mustard, salt, and pepper until combined.
  5. In a large bowl, combine roasted sweet potatoes, spinach or kale, and red onion. Drizzle with vinaigrette and toss gently to coat.
  6. Serve immediately, garnished with orange segments if desired.
