  • 3 cloves fresh garlic, minced
  • 1 cup long grain rice
  • 1 cup salsa verde (store-bought or homemade)
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; sauté for 5-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, add minced garlic; sauté for one minute until fragrant.
  3. Stir in the rice and mix well with garlic. Pour in chicken broth and bring to a simmer.
  4. Add salsa verde and return the chicken to the skillet. Cover and cook for about 20 minutes until rice is tender.
  5. Remove from heat; let rest for 5 minutes before fluffing the rice with a fork. Serve topped with cilantro and lime wedges.
