- 1 lb lean ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup frozen corn
- 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
- 1 cup shredded sharp cheddar cheese
- 2 tbsp taco seasoning
- 1 medium onion, chopped
- 1 bell pepper, chopped
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- While the beef cools, chop the onion and bell pepper.
- In a slow cooker, layer the browned beef, kidney beans, corn, diced tomatoes (with juice), taco seasoning, onion, and bell pepper. Stir to combine.
- Cover and cook on low for 6 hours or high for 3 hours.
- About 15 minutes before serving, sprinkle cheddar cheese on top and cover until melted.
- Serve in bowls or plates; garnish with sour cream or cilantro if desired.
