  • 1 lb ribeye or sirloin steak
  • 2 cups cooked long-grain white rice
  • 1 cup queso blanco (pre-made or homemade)
  • 1 cup mixed bell peppers (red, yellow, green), chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Season the steak with salt, pepper, cumin, chili powder, and paprika. Let it sit while preparing the vegetables.
  2. Heat a skillet over medium-high heat, add oil, and sear the steak for about 4-5 minutes per side until desired doneness. Remove from skillet and let rest before slicing.
  3. In the same skillet, sauté onions and bell peppers until tender (about 5 minutes).
  4. Cook rice according to package instructions. Add cooked rice to the skillet with sautéed vegetables.
  5. Pour queso blanco over the rice mixture and stir until well combined.
  6. Slice the rested steak against the grain and serve it on top of the cheesy rice mixture.
