  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin powder
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Rinse the veggies under cool water and chop them into bite-sized pieces.
  2. In a skillet over medium heat, add olive oil. Season chicken with salt, pepper, and garlic powder. Cook for about 6 minutes per side until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before chopping into cubes.
  3. In a small bowl, whisk together lime juice, olive oil, cumin powder, salt, and pepper.
  4. In a large mixing bowl, combine chopped chicken, cherry tomatoes, cucumber, black beans, red onion, and garlic. Pour dressing over and toss until well coated.
  5. Serve in bowls or on plates garnished with fresh cilantro if desired.
