- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 can (15 oz) black beans, rinsed and drained
- 1/4 cup freshly squeezed lime juice
- 2 tbsp extra virgin olive oil
- 1 tsp cumin powder
- Salt and pepper to taste
Instructions
- Gather all ingredients. Rinse the veggies under cool water and chop them into bite-sized pieces.
- In a skillet over medium heat, add olive oil. Season chicken with salt, pepper, and garlic powder. Cook for about 6 minutes per side until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes before chopping into cubes.
- In a small bowl, whisk together lime juice, olive oil, cumin powder, salt, and pepper.
- In a large mixing bowl, combine chopped chicken, cherry tomatoes, cucumber, black beans, red onion, and garlic. Pour dressing over and toss until well coated.
- Serve in bowls or on plates garnished with fresh cilantro if desired.
