Instructions
- Preheat your oven to 400°F (200°C). Wash and prick sweet potatoes with a fork.
- Place sweet potatoes on a baking tray lined with parchment paper and roast for 45-50 minutes until tender.
- In a skillet over medium heat, cook ground turkey until browned (5-7 minutes). Stir in taco seasoning, black beans, and salsa; simmer for 5 minutes.
