  • 1 cup shredded cheddar and Monterey Jack cheese blend
For the Quesadilla
  • 4 large flour tortillas

  • 1/2 cup sour cream
  • 2 tbsp green onions, chopped
  • 1 cup shredded lettuce

How to Make Buffalo Turkey Quesadillas
  1. In a large skillet over medium heat, add the lean ground turkey. Cook until browned and no longer pink, around 5-7 minutes.
  2. Stir in the buffalo sauce, letting it simmer in the skillet for an additional 2 minutes.
  3. Lay a tortilla flat on a clean surface. Sprinkle one side with a generous amount of cheese, then add a spoonful of the turkey mixture. Top it off with more cheese before folding the tortilla in half.
  4. In the same skillet, gently cook each folded quesadilla for about 3 minutes on each side.
  5. Slice the cooked quesadillas into wedges and top with a dollop of sour cream and a sprinkle of chopped green onions.
