Ingredients

For the Casserole
  • 1 lb lean ground beef this is the heart of the dish, providing that savory base.
  • 2 cups long-grain white rice gives the casserole body and helps soak up all the delicious flavors.
  • 2 cups sharp cheddar cheese adds that irresistible creaminess and tangy flavor that makes it cheesy!
  • 1 medium onion diced, enhances the savory taste with its natural sweetness when cooked.
  • 1 whole bell pepper diced, brings freshness and a hint of sweetness; you can use any color you have on hand.
  • 1 tsp garlic powder elevates the flavors with a warm, aromatic touch.
  • 15 oz canned tomato sauce adds moisture and a rich, savory depth to the casserole.
  • 2 cups chicken broth infuses additional flavor and helps cook the rice perfectly.
  • Salt and pepper to taste, essential for balancing flavors; season generously for the best taste!

Equipment

  • large skillet
  • Baking dish
  • Nonstick cooking spray

Method

How to Make Cheesy Ground Beef Rice Casserole
  1. Preheat your oven to 350°F (175°C). Grab a baking dish and spray it with nonstick cooking spray to ensure nothing sticks while baking.
  2. Brown the ground beef in a large skillet over medium heat. As it cooks, drain any excess fat. Toss in the diced onion and bell pepper; sauté them until they become tender, about 5 minutes.
  3. Mix in the garlic powder, salt, pepper, tomato sauce, and chicken broth. Let the mixture simmer for about 3 minutes so all the flavors meld beautifully.
  4. Combine the cooked rice with the savory beef mixture. Don’t forget to add half of that glorious cheddar cheese—mix it all together well!
  5. Transfer the combined mixture into your prepared baking dish. Sprinkle the remaining cheddar cheese on top. Pop it in the oven and bake uncovered for 25-30 minutes, or until it’s bubbly and golden brown.
  6. Cool the casserole for a few minutes before serving. This little wait makes it easier to dish out!
