  • 2 Ripe avocados
  • 1 Ruby red grapefruit
  • 4 cups mixed greens
  • 1 cup cherry tomatoes
For the Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon honey or agave syrup
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste
For the Toppings
  • 1/4 cup fresh mint
  • 1/2 cup feta cheese crumbled

Method
 

Preparation
  1. Peel the grapefruit and segment it while removing any membranes.
  2. Slice the avocados into wedges after halving and scooping out the flesh.
  3. In a bowl, mix mixed greens, halved cherry tomatoes, grapefruit segments, and avocado slices.
  4. Whisk together olive oil, honey or agave syrup, lemon juice, salt, and pepper in a small bowl.
  5. Drizzle the dressing over the salad and toss gently until coated.
  6. Finish with fresh mint and crumbled feta cheese on top before serving.
