- Preheat your oven to 400°F (200°C).
- Sauté the chopped onion in a large skillet over medium heat with olive oil until translucent.
- Add the minced garlic and let it cook for an additional minute.
- Crumble in the ground turkey, seasoning generously with paprika, cumin, salt, and pepper.
- Cook until the turkey is browned, around 5-7 minutes.
- Toss diced Yukon Gold potatoes with olive oil, salt, and pepper on a baking sheet.
- Roast them in the preheated oven for 25-30 minutes.
- Combine the cooked turkey and roasted potatoes in the skillet over low heat for about five minutes.
- Serve hot, garnished with fresh parsley if desired.
