  • 1 lb lean ground turkey a healthier protein choice
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
For the Potatoes
  • 1.5 lbs Yukon Gold potatoes diced
  • 2 tbsp extra virgin olive oil for cooking
For Seasoning
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Sauté the chopped onion in a large skillet over medium heat with olive oil until translucent.
  3. Add the minced garlic and let it cook for an additional minute.
  4. Crumble in the ground turkey, seasoning generously with paprika, cumin, salt, and pepper.
  5. Cook until the turkey is browned, around 5-7 minutes.
  6. Toss diced Yukon Gold potatoes with olive oil, salt, and pepper on a baking sheet.
  7. Roast them in the preheated oven for 25-30 minutes.
  8. Combine the cooked turkey and roasted potatoes in the skillet over low heat for about five minutes.
  9. Serve hot, garnished with fresh parsley if desired.
