Steps
  1. Sauté the diced onion in a large skillet over medium heat until translucent, about 5 minutes. Stir in minced garlic and grated ginger, cooking until fragrant.
  2. Add the ground turkey, breaking it up with a spatula, and cook until browned all over, approximately 7 minutes.
  3. Stir in the ground cumin and chili powder, toasting for a minute to enhance their flavors.
  4. Pour in the coconut milk and stir well. Allow to simmer for about 10 minutes.
  5. Add your chopped vegetables during the last few minutes of cooking, or serve fresh on top.
  6. Spoon the mixture into bowls and garnish with fresh herbs. Optionally, drizzle with lime juice.
