Preparation
- Preheat the oven to 375°F (190°C).
- Prepare the artichokes by trimming the tops and removing the tough outer leaves. Clean them thoroughly.
- Mix together the breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, lemon juice, olive oil, salt, and black pepper in a bowl.
- Stuff each artichoke generously with the breadcrumb mixture.
- Place the stuffed artichokes in a baking dish and pour the vegetable broth around them.
- Cover the dish with foil and bake for 60 minutes.
- Uncover and continue baking for an additional 10 minutes, or until the tops are golden brown and crispy.
- Serve warm with slices of lemon on the side.
