Method
 

Making Lammas Bread
  1. Combine the warm water and active dry yeast in a large bowl. Allow it to sit for about 5 minutes, until frothy.
  2. Mix the all-purpose flour, salt, and honey in a separate bowl. Whisk until blended.
  3. Blend the yeast mixture with the dry ingredients, adding the olive oil. Stir until a sticky dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Rise the dough in a greased bowl, covered, for 1 hour or until doubled in size.
  6. Preheat your oven to 375°F (190°C).
  7. Shape the risen dough into a loaf and place it on a baking sheet.
  8. Brush the top with olive oil. Sprinkle sesame seeds and fresh herbs if using.
  9. Bake for 30 minutes until golden brown and sounds hollow when tapped.
  10. Cool on a wire rack before slicing.
