How to Make Pistachio Kiss Cookies
- Preheat your oven to 350°F (175°C).
- Cream together the unsalted butter, granulated sugar, and brown sugar in a large mixing bowl until smooth and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
- Combine the dry ingredients with the wet mixture gradually, mixing until just combined.
- Fold in the chopped pistachios gently.
- Scoop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 12 minutes or until the edges are lightly golden.
- Press a chocolate kiss into the center of each cookie immediately after they come out of the oven.
- Cool the cookies on a wire rack, then garnish with additional chopped pistachios.
