How to Make Pistachio Kiss Cookies
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter, granulated sugar, and brown sugar in a large mixing bowl until smooth and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Combine the dry ingredients with the wet mixture gradually, mixing until just combined.
  6. Fold in the chopped pistachios gently.
  7. Scoop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 12 minutes or until the edges are lightly golden.
  9. Press a chocolate kiss into the center of each cookie immediately after they come out of the oven.
  10. Cool the cookies on a wire rack, then garnish with additional chopped pistachios.
