  1. Hard-boil the eggs: Start by placing your eggs in a pot filled with cold water. Bring it to a gentle boil over medium heat, then cover and simmer for 10 minutes. After boiling, transfer the eggs to an ice bath to cool completely.
  2. Peel and slice: Once cooled, gently tap the eggs on a hard surface to crack the shell. Peel them under running water for easier removal. Slice the eggs in half lengthwise, placing the yolks in a mixing bowl.
  3. Mix the filling: Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and green food coloring (if using) to the yolks. Mash and mix everything with a fork until it reaches a smooth and creamy consistency, tasting and adjusting seasoning as necessary.
  4. Fill the egg whites: Using a spoon or piping bag, carefully fill the egg white halves with the luscious yolk mixture. Make sure to heap it a little for a generous look!
