How to Make Steak Bites with Pesto Pasta
  1. Cut the sirloin or ribeye steak into bite-sized pieces and generously season with salt and pepper.
  2. Fill a pot with water, bring it to a boil, and cook the pasta according to package instructions until it’s al dente. Drain and set aside, reserving a bit of pasta water for later.
  3. In a large skillet over medium-high heat, warm the extra virgin olive oil. Add the seasoned steak bites in batches, searing them for about 3-4 minutes until they are golden brown on all sides.
  4. Toss in the minced garlic into the skillet with the steak and sauté for an additional minute.
  5. Combine the cooked pasta and basil pesto into the skillet with the steak. Mix everything well, adding a splash of the reserved pasta water if needed.
  6. Plate the pasta with steak bites and serve immediately, garnishing with crushed red pepper flakes or freshly grated parmesan cheese if desired.
